1. Classic Minestrone Soup

Ingredients:

  • 1 onion, chopped

  • 3 carrots, chopped

  • 3 celery stalks, chopped

  • 4 cloves garlic, minced

  • 1 zucchini, chopped

  • 1 cup green beans, chopped

  • 1 can (15 oz.) diced tomatoes

  • 1 can (15 oz.) kidney beans, drained and rinsed

  • 6 cups vegetable broth

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • 1 cup small pasta (like ditalini or macaroni)

  • 2 cups spinach leaves, chopped

  • Grated Parmesan cheese for garnish (optional)

Instructions:

  1. Sauté Vegetables: In a large pot, sauté onion, carrots, celery, and garlic until soft, about 5 minutes.

  2. Add Ingredients: Add zucchini, green beans, diced tomatoes, kidney beans, broth, basil, oregano, salt, and pepper. Bring to a boil.

  3. Cook Pasta: Add pasta and simmer until pasta is tender, around 10 minutes.

  4. Finish and Serve: Add spinach and cook until wilted. Serve with a sprinkle of Parmesan if desired.
